Meet The Couple Whose Plant-Based Ice Cream Brand Will Take You On A Journey Around The World
The conversation around what we eat, where it comes from, and how it impacts our health is one that remains relevant - and for good reason! These were the exact concerns that Nicole Foster had when she first had children. After obtaining a certification as a raw vegan chef, she experimented with making dairy-free ice cream for her lactose-intolerant children. With her husband, Dwight Campbell, by her side as Executive Chef, they set off on a culinary adventure, reimagining ice cream as healthy, guilt-free food. From their desire to offer an option that is not just tasty but better for the body and the environment, Cajou Creamery (Kay-jū) was born.
Based in Baltimore, MD, Cajou Creamery is the first plant-based creamery in the DMV area and the first to use “hand-crafted plant milks to create [the] bases.” Using real ingredients, Dwight and Nicole are offering pints of joy that are made with high-quality, whole superfoods, are free from chemicals, artificial flavors and fillers, and unlike anything you would find elsewhere.
What adds to the unique nature of this brand is that each flavor is inspired by the couple’s love for travel and cuisine. They offer an array of flavors that takes you on an international journey: the Middle Eastern inspired flavor, Baklava, is the perfect blend of sweet and salty, with crushed pistachios; Cortadito, inspired by the traditional Cuban coffee, is made with coffee, which is then folded into the couple’s very own cashew milk base for a sweet pick-me-up; and, Sweet Potato Pie puts a spin on the traditional Southern delight, blending roasted sweet potatoes with cinnamon and nutmeg. With multiple other flavors, including Kulfi and Mexican Cacao, each pint is a journey to a whole new world.
